Berry Blast Granola

Colorful Crunch Afterschool Snack

This colorful and crunchy granola is a perfect grab-and-go breakfast or a healthy snack for busy school days.

Ingredients:

  • 2 cups old-fashioned oats
  • 1/2 cup sliced almonds
  • 1/4 cup coconut flakes
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup dried blueberries
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine oats, almonds, coconut flakes, sunflower seeds, dried cranberries, blueberries, and chia seeds.
  3. In a small bowl, whisk together maple syrup, olive oil, vanilla extract, and salt.
  4. Pour the wet ingredients over the dry ingredients and stir until evenly coated.
  5. Spread the granola mixture in a single layer on a large baking sheet.
  6. Bake for 15-20 minutes, stirring every 5 minutes, until golden brown and crispy.
  7. Let cool completely before storing in an airtight container.

Optional: Add your favorite mix-ins like dark chocolate chips, dried mango, or flax seeds for extra flavor and texture.
