Colorful Crunch Afterschool Snack
This colorful and crunchy granola is a perfect grab-and-go breakfast or a healthy snack for busy school days.
Ingredients:
- 2 cups old-fashioned oats
- 1/2 cup sliced almonds
- 1/4 cup coconut flakes
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries
- 1/4 cup dried blueberries
- 1/4 cup chia seeds
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine oats, almonds, coconut flakes, sunflower seeds, dried cranberries, blueberries, and chia seeds.
- In a small bowl, whisk together maple syrup, olive oil, vanilla extract, and salt.
- Pour the wet ingredients over the dry ingredients and stir until evenly coated.
- Spread the granola mixture in a single layer on a large baking sheet.
- Bake for 15-20 minutes, stirring every 5 minutes, until golden brown and crispy.
- Let cool completely before storing in an airtight container.
Optional: Add your favorite mix-ins like dark chocolate chips, dried mango, or flax seeds for extra flavor and texture.
